Spaghetti alla Bolognese lunch

Recently, I’ve been trying to get Andrew to eat more fruits and vegetables.

For today’s lunch, I thought I would try some Bolognese sauce since it has finely grated carrots, onions, celery, and mushrooms. Along with the wine, beef, milk and tomato, it’s a complex sauce.

Since they’re out-of-season, I’ve been buying frozen berries.

This mixture has pomegranate seeds!

But…

Andrew doesn’t like it!

Autumn lunch – Kettle rice Kamameshi

For Tuesday’s bentos, I made kettle rice with Japanese mountain vegetables! It’s really tasty, especially the crispy rice from the bottom of the pot! Topped with these little sweet potato flowers, it looks like autumn to me. 

The chicken and peppers were cooked with the foil method. I roasted some extra mushrooms for Andrew and added the bottle of soy sauce if he needs it. (I think Andrew will pick out the burdock root in the rice. He doesn’t know what it is!) 

I was going to have a hardboiled egg in my lunch, but my stash of eggs froze in the back of the refrigerator!

Stoplight pasta lunch

My standard warm and cold tier lunch.

I made my version of stoplight pasta with some scraps from the refrigerator. Three-color pasta with sautéed chicken, yellow pepper, onion, mushrooms, chives, and garlic in a milk and mozzarella sauce (not Alfredo sauce!). It has a mild, creamy taste with a sticky texture.

  • Sliced apple
  • Grape tomatoes
  • Clementine orange
  • Olives

This is the last of the organic grape tomatoes and preserved olives! It’s too late in the season for any other tomatoes but canned. Well, any that taste good!
